Turkey Currant Meatballs
with a Simple Tomato Sauce
Served over Sautéed Spinach

Ingredients (for meatballs)

  1. 8 ounces ground turkey
  2. 1/4 cup currants
  3. 1/2 leek thinly sliced
  4. 1 teaspoon Smoked Hungarian Paprika
  5. 1/4 teaspoon cumin
  6. 1/4 teaspoon dry mustard
  7. 1 tablespoon olive oil

Ingredients (for tomato sauce)

  1. 8 ounce can diced tomatoes
  2. 1/2 leek thinly sliced
  3. 1 glove garlic thinly sliced
  4. salt & pepper
  5. 1/4 cup currants
  6. 1 tablespoon olive oil

Directions

  1. Combine ingredients for meatballs (should make 8 meatballs) and fry in olive oil till browned.
  2. In another pan cook garlic and leek till fragrant. Add tomatoes, salt & pepper and currants. Gently simmer.
  3. Add cooked meatballs to sauce, cover and gently simmer.
  4. Serve over sautéed spinach.
