Turkey Currant Meatballs
with a Simple Tomato Sauce
Served over Sautéed Spinach

Ingredients (for meatballs)
- 8 ounces ground turkey
- 1/4 cup currants
- 1/2 leek thinly sliced
- 1 teaspoon Smoked Hungarian Paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon dry mustard
- 1 tablespoon olive oil
Ingredients (for tomato sauce)
- 8 ounce can diced tomatoes
- 1/2 leek thinly sliced
- 1 glove garlic thinly sliced
- salt & pepper
- 1/4 cup currants
- 1 tablespoon olive oil
Directions
- Combine ingredients for meatballs (should make 8 meatballs) and
fry in olive oil till browned.
- In another pan cook garlic and leek till fragrant. Add tomatoes,
salt & pepper and currants. Gently simmer.
- Add cooked meatballs to sauce, cover and gently simmer.
- Serve over sautéed spinach.
