Roasted Brussels Sprouts

with Apple, Leek, and Pine Nuts

Ingredients

  • 1 diced apple (cored and not peeled)
  • 1 package/container  Brussels sprouts, trimmed and halved
  • 1 leek, cleaned, halved and thinly sliced
  • 2  teaspoons  olive oil
  • 1/4 cup Pine Nuts
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  freshly ground black pepper

Preparation

1. Preheat oven to 400°.

2. Combine apple, leek, pine nuts and Brussels sprouts in a cast iron pan. Add Olive Oil, salt, and freshly ground black pepper; toss well. Bake at 400° for 25 minutes or until sprouts are tender.
