Roasted Brussels Sprouts
with Apple, Leek, and Pine
Nuts

Ingredients
- 1 diced apple (cored and not peeled)
- 1 package/container Brussels sprouts, trimmed and halved
- 1 leek, cleaned, halved and thinly sliced
- 2 teaspoons olive oil
- 1/4 cup Pine Nuts
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Preparation
1. Preheat oven to 400°.
2. Combine apple, leek, pine nuts and Brussels sprouts in a cast
iron pan. Add Olive Oil, salt, and freshly ground black pepper; toss
well. Bake at 400° for 25 minutes or until sprouts are tender.
