Quinoa Cod Cakes

Ingredients

I used about 1 1/2 cup of leftover cod from the night before. I cooked 1/4 cup Quinoa. I mixed the cod, quinoa, 1 egg, 1 thinly sliced scallion, 1/4 diced red and orange peppers, a wee bit of thinly sliced celery, a few dashes of Tabasco sauce (Well, actually more than a few!). Fried in hot vegetable oil. Served with my Thousand Island Dressing (ketchup, mayo, relish). Delicious!
